Pairing: Seafood and shellfish make excellent matches, particularly grilled or seared scallops with a citrus butter sauce, oysters on the half shell with a shallot mignonette, herb-crusted white fish like cod or halibut, and shrimp ceviche with lime and mango. Poultry and light meats also work well, including roast chicken with lemon and thyme, turkey breast with an herb and garlic rub, and pork tenderloin with pineapple salsa. Vegetarians can enjoy pairings such as fresh or aged goat cheese, grilled asparagus with parmesan shavings, summer vegetable tian with zucchini, eggplant, and tomatoes, or sautéed mushrooms with garlic and herbs. The wine’s crispness and tropical richness also make it an excellent match for Asian and spiced dishes, such as Thai green curry with coconut milk, Vietnamese lemongrass chicken, and sushi rolls featuring fresh tuna or salmon. About: Château Bastor-Lamontagne, located in the commune of Preignac within the Sauternes appellation of Bordeaux, boasts a rich history that dates back to the Middle Ages. First documented in 1453, the estate was once the property of the King of France. On July 3, 1711, it was sold to Vincent de La Montaigne, a councilor at the Bordeaux Parliament. This acquisition led to the estate adopting the combined name of Bastor (or Bastore) and Lamontagne, reflecting its new ownership.
