From: Burgundy, France
Varietal: Aligote
Taste: This lovely Aligoté shines with aromas of lemon confit, white flowers, Anjou and Bartlett pears, ripe Cosmic apple, and a distinctive flinty minerality. The palate follows suit, leading with bright lemon curd and confit that move into ginger, green mango, and passionfruit flavors that ride on bright acidity and a saline finish.
Pairing: “I love to prepare vegetables with Aligoté, because vegetables match so well with the wine’s flavors,” he says. “Of course, you can also marry Aligoté with fish or shellfish with a simple drop of olive oil and a squeeze of lemon juice. Spices are also good companions: lemongrass, star anise, pepper, ras el hanout [a Moroccan spice blend].” From the article above, a quote from the chef at BoisRouge, Philippe Delacourcelle, president of the Aligoteurs. We love pairing wines like this with seafood dishes like fresh Dungeness crab with aioli, crab cakes, sushi, sashimi with ponzu, fried cod and chips, grilled or sautéed shrimp, moules marinières and frites, and poached sea bass. Alternatively, this wine is fantastic for vegetarian wine pairings. Polenta with spring peas and asparagus, ricotta dumplings with buttery peas, zucchini tarts, and pasta dishes like the one we’re featuring below.

About. Vignerons de Buxy was founded in Cote Chalonnaise in 1931 by a community of 98 vine growers, who, in the face of the Great Depression, sought to pool resources and formed a cooperative. The grouping of the many little family plantings, all inspired by the same values of solidarity, sharing, and conviviality, resulted in a brand representing a human and social endeavor stretching back over 89 years.
