Description

From: Savigny-lès-Beaune, Bourgogne, France

Varietal: Pinot Noir

Taste: This Pinot Noir is a translucent ruby hue in the glass. The nose is immediately expressive, offering a bouquet of ripe red berries—wild strawberries, crushed raspberries, and red currants—interwoven with floral hints of dried rose petals and violets. As the wine opens, more complex layers emerge, including notes of black tea, forest floor, and a whisper of savory spice reminiscent of clove and anise.

“A pale crimson red. An attractive bouquet with a bit of the famous crushed strawberries, not as much pepper as the village wine. More together at the moment, but again not quite the crisp precision of the best years. A good long finish, though, which has me licking my lips Drink from 2025-2030. Tasted Oct 2022.”  Jasper Morris

Pairing:
Roast white meats, such as herb-crusted pork loin or garlic-studded roast chicken, compliment the wine’s red berry and earthy notes, while meaty fish like grilled salmon or seared tuna steaks offer a satisfying contrast to its acidity and tannins. For a regional pairing, consider coq au vin, where the wine’s depth enhances the dish’s rich, slow-braised flavors.

About: Simon Bize et Fils, a revered name in Burgundy’s Côte de Beaune, is based in the village of Savigny-lès-Beaune. The original Simon Bize laid the domaine's foundation and began with a modest holding of vineyards during the challenging phylloxera crisis. His son, also named Simon, took over in 1918, expanding the vineyard holdings and benefiting from advancements like horse-drawn plows that eased vineyard labor. In 1950, the next generation, yet another Simon Bize, transformed the domaine by focusing on directly marketing their wines and establishing strong relationships with private clients and restaurants.
