Description

From: Beaune, Burgundy, France
Varietal: Pinot Noir

Taste: The wine shows a deep ruby hue with garnet reflections in the glass. Aromas are focused and savory, delivering tart dark cherry, crushed raspberry, and forest floor layered with subtle spice, dried rose petal, and hints of warm smoked cedar. The wine is medium to full-bodied on the palate, with firm tannins and fresh acidity. Flavors echo the nose with red and black berry fruit, earthy undertones, and graphite minerality. The finish is long and structured, with persistent tension and a savory edge.

Pairing: The 2019 Pommard’s firm tannic frame and earthy depth call for dishes with similar weight and umami. Classic Burgundy pairings in creamy Brie and Camembert, hearty rabbit in mustard sauce, and the bold, savory flavors of andouillette sausage. The wine’s structure and earthy depth complement the richness of soft cheeses, enhance the rabbit's tangy mustard and tender texture, and stand up to the intense, rustic character of traditional French sausages.

About: Nuiton-Beaunoy is a producer based in Beaune, the historical heart of Burgundy’s Côte d'Or. Rather than being a single domaine, Nuiton-Beaunoy is the flagship label of the Vignerons Associés de Beaune, a cooperative winery that brings together nearly 80 growers from across Burgundy. The cooperative’s cellars and vinification center are in the hills just west of Beaune, positioning them at a strategic crossroads between Côte de Beaune and Hautes-Côtes appellations.
