Taste: The wine presents a vibrant and clear garnet hue with a medium intensity.
On the nose, the wine opens with bright red fruit aromas of wild cherry, raspberry, and red currant. These primary notes are layered with subtle violet and rose petals and floral nuances. As the wine evolves in the glass, it reveals earthy undertones of forest floor, wet stone, and a delicate hint of spice, such as white pepper and clove. A touch of fresh herbs, like thyme or bay leaf, rounds out the aromatic profile, adding depth and complexity. The wine is medium-bodied on the palate with vibrant acidity and finely grained tannins. The red fruit flavors dominate initially, with juicy notes of cherry, cranberry, and pomegranate. These are complemented by the minerality typical of the Kimmeridgian soils, creating a chalky, saline undertone that lingers through the mid-palate. Subtle secondary flavors of dried leaves, black tea, and a whisper of oak add complexity without overpowering the fruit.



Pairing
Try a grilled pork tenderloin for American-inspired options, whose acidity and subtle earthiness elevate the tender pork. A barbecue chicken flatbread topped with caramelized onions and fresh herbs is another great pairing, with the wine’s vibrant acidity cutting through the sauce's sweetness and enhancing the smoky chicken. Lastly, a seared tuna steak with herb butter creates a harmonious combination, as the wine’s minerality and clean acidity complement the buttery richness of the tuna.

About: Dominique Gruhier’s journey has been anything but smooth. Yet, despite his challenges, Dominique radiates warmth, charm, and a natural sense of hospitality that makes anyone feel welcome. As his domaine and the often-overlooked appellation of Épineuil have gained recognition, Dominique has been able to invest in the tools and changes needed to showcase his incredible talent. These are some of the most exceptional values in Pinot Noir, though not just any Pinot Noir: this is Chablisien Pinot Noir, full of unique character and freshness.

The winery’s origins trace back to the 12th century when the Abbey of Saint-Martin de Tours founded a vineyard in Épineuil. These vineyards thrived in the Middle Ages under the eye of monks who recognized the unique terroir of the region, defined by Kimmeridgian limestone and clay soils. However, like much of Burgundy, the region faced challenges following the phylloxera epidemic in the late 19th century, which devastated the vineyards and led to a decline in winemaking activity. In 2012, this historic estate celebrated its 800th anniversary under one very motivated man, Dominique Gruhier.
