Description
From: Nagambie Lakes, Central Victoria, Australia
Varietal: Cabernet Sauvignon
Taste: A deep garnet hue introduces the wine in the glass, leading to an expressive nose of blackcurrant, cassis, and dark cherry, layered with graphite, cedar, and hints of dried tobacco. On the palate, the wine is structured yet balanced, with firm tannins supporting flavors of ripe blackberry, plum, and mulberry. A touch of mocha and spice from oak aging adds depth, while the acidity carries through to a long, persistent finish marked by savory, earthy undertones.
Pairing: The structured profile and refined tannins of the 2017 "Estate" Cabernet Sauvignon make it a versatile partner for rich, protein-driven dishes. The wine’s dark fruit and spice elements complement grilled meats such as rosemary, garlic-marinated lamb chops, or a dry-aged ribeye steak with a peppercorn crust. Braised short ribs or slow-cooked beef ragù allow its acidity to shine, cutting through the richness of the dish.
About: Tahbilk Winery, established in 1860, is one of Australia’s oldest continuously operating family-owned wineries, situated in Victoria’s Nagambie Lakes region. Its name originates from the local Aboriginal term meaning “place of many watering holes,” acknowledging the estate’s proximity to the Goulburn River and its distinctive inland water system. In its early years, the winery saw the planting of classic European varieties, including Shiraz and Marsanne, which laid the groundwork for its lasting reputation. However, by the late 1890s, ‘Chateau Tahbilk’ entered a period of decline, struggling to uphold its initial prosperity. This changed in 1925 when the estate was acquired by Reginald Purbrick, an entrepreneurial gentleman who purchased the property for £44,879 (approximately $4.5 million today).
