Tasting Notes: What a gift to those of us, as Jancis remarks above on the 2021 vintage, who treasure delicacy and perfume. Aromas of Ranier cherry, bing cherry, juicy raspberry, and bright strawberry mingle with a floral lift and touches of forest floor. These flavors remain on the palate, which showcases supple red fruit, elegant acidity and a soft, lively texture. Chorey-les-Beaune is often thought to be a cheerful, friendly red that “goes down too easily,” which this absolutely does. However, this wine shows off a structural balance of acidity and tannin that hints at age-worthiness. Drinking well now through the next five to ten years with proper storage.
Pairing: Some ideas for this charming and versatile wine include coq au vin, roasted chicken with a side of root veggies cooked in the drippings, grilled or roasted salmon, or simple preparations of squash and/or mushrooms with garlic, shallots, and butter. About. Domaine l'Embellie, formerly known as Domaine Michel Martin, may be considered the new kids on the Burgundy block, but they are making a name for themselves with hard work, dedication, and a commitment to quality. Today, we explore the 2021 l'Embellie Chantal Martin Chorey-Les-Beaune, “Les Bons Ores,” a wine that reflects the history, terroir, and the passion of its winemakers.
A Family Legacy: Domaine Michel Martin dates back to the time of Michel's grandparents, with landholdings in the Hautes-Côtes de Nuits and the Côte de Beaune. After the domaine was split in 2002, Michel and his wife Chantal took over 4.5 hectares of vineyards in Chorey-lès-Beaune, Savigny-lès-Beaune, and Beaune. Chantal, once a nurse, transitioned into winemaking full time and obtained a BPREA diploma in viticulture and oenology. They have since invested in better winemaking tools and worked to become more precise with their vineyard practices.
Viticulture Intégrée: With a focus on respecting the environment and protecting the vines, the domaine practices integrated viticulture, minimizing the use of chemicals, plowing the soil for weed control, and hand-harvesting the grapes. The estate was certified organic in 2012, and Chantal is interested in biodynamics and preventive actions, aiming to guide and support the vines rather than forcing them.
