Hummus Cafe, our favorite local Egyptian and Mediterranean restaurant, makes some excellent hummus and kabobs. Our favorite wine pairings for hummus include Cabernet Franc (especially from the Loire Valley) for its medium body, good acidity, and slight green bell pepper notes and Oregon Pinot Noir which tends to be light to medium-bodied with fruity and earthy characteristics. Any dish that includes feta would work well with Tempranillo, especially Rioja, because its brighter cherry/raspberry notes contrast the saltiness of the cheese. Lamb and beef dishes often call for bigger bolder red wines, like Syrah, or even a Bordeaux. For falafel, my personal favorite pairing is a dry sparkling wine, or rosé to cut through the crispy-fried deliciousness.
