Moa and her son, a trained chemist, worked with other chemists and oenologists for over a year to determine how to de-alcoholize wine while maintaining its flavor. Recognizing the importance of taste for the product's success, they started in Languedoc, famed for its fruity wines, and engaged a research center in Alsace along with experts from universities in Bourgogne, Sweden, and Spain.
