2019 was a warm and challenging year in Gredos, with frost in March, hail in the summer and rains close to the harvest date. The 2019 Pegaso Zeta was produced with old-vine Garnacha on granite and schist soils. It fermented with indigenous yeasts in oak and stainless steel vats and amphorae, and it matured in a combination of 500- and 600-liter barrels, amphorae and stainless steel for 12 months. It's aromatic and expressive, with red fruit and herbs and unnoticeable oak. It's round and juicy, powerful and balanced with some grainy tannins. It's a wine that should do very well with food.
Pairing: The beauty of Garnacha is that (especially when you have old vines, exemplified in this wine here) it’s so beautifully versatile. Feeling like grilled teriyaki and pineapple? Something a bit spicy with elements of Pimentón (Paprika), Spanish paprika, or pimentón (the rockstar of Spanish food) or saffron? Look no further. About. So basically, Pegaso Zeta is a red wine produced by the winery Compañía de Vinos Telmo Rodríguez in Cebreros (Ávila), V.T. Castilla y León. More specifically, this is a wine made with Grenache from old vineyards planted in a vase shape, located in Sierra de Gredos. These vineyards are planted on granite soils with slate, on a base of magmatic rock, shallow, and with quite a lot of drainage. All the vineyards are cultivated traditionally and organically.
Harvesting is done manually, and the grapes in the vineyard are selected carefully before sorting. Once they arrive at the winery, the grapes ferment with native yeast, and they age for 6 months in French oak barrels of different origins and ages. Then, the wine is left to stand for six months in stainless steel deposits.
