Tasting Notes: A unique sauvignon to say the very least. Luminous straw-green in the glass. A beautiful aromatic medley of pine resin, lime, white flowers, sage, thyme, and wet stones. Ripe island fruits, citrus, and gooseberry envelope the mouth. All this culminates with a long, saline finish. An absolute must try!
Pairing: Volga pairs well with seafood, chicken, green vegetables, and herb-forward sauces like pesto, chimichurri, and mojo sauce, as well as briny sauces, spicy dishes, spring vegetables, and fresh tomatoes. This Chimichurri by J. Kenji López-Alt is a really useful staple in the kitchen. It stores well for weeks and can be used to grill vegetables, as a spread on a crusty loaf, a marinade for meats, to dress a potato salad, and the list goes on!
About: Alto Adige is a wine-producing province of farthest northern Italy. It constitutes the northern half of the Trentino-Alto Adige wine region. Immersed in the Southern Limestone Alps, Alto Adige is bordered by Veneto to the east, Lombardy to the west and the Tirol region of Austria to the north.
Alto Adige has both Alpine and Mediterranean climate zones. The Alps protect the area from cold masses from the north so that warm, moist air from Lake Garda and the Mediterranean Ocean can dominate the region. Ideal conditions for viticulture are created with mild days, plenty of sunshine hours and rainfall concentrated to the winter months.
The Peter Dipoli winery was created in 1987 when the family bought 1.2 hectares of vineyards in the Penon district of the municipality of Kurtatsch. After a complete replanting of the vineyard with Sauvignon Blanc vines, the first harvest in 1990 yielded 1,637 bottles of Voglar.
In the years that followed, the winery grew by buying and leasing wine land, including the Iugum vineyard in the neighboring municipality of Margreid. In the first few years, the grapes are processed in a friend's cellar.
A decisive step is the purchase of an old farm in Vill in the municipality of Neumarkt. From 1998 the cellar of the winery was set up there.
