Taste: A classic example of Txakoli rose from the Basque country of Spain. Made from 100% Hondarrabi Beltza, an indigenous grape, this Txakoli is harmonious, with notes of fresh wild strawberries and gentle fizz. It is silky and captivating on the palate, with racy acidity, hints of green grass, and slight salinity leading into a radiant finish. A tongue-tickler for sure.
Pairing: Put yourself in a fresh state of mind for pairing ideas with this charming rose that we crave all summer long. Greens, seafood, dishes that include fresh citrus (like say, ceviche or fish tacos!) all work wonderfully well. For our official pairing recipe, we’re sharing a French picnic classic for Pan Bagnat that also works here, since the Spanish do canned tuna so beautifully. The following recipe will yield 2-3 servings and will only take about 15 minutes or so to make.
About. Rezabal is a family-owned winery located in the Basque country of Spain in Zarautz and belonging to PDO "Getariako Txakolina". The winery features the latest technology, using the most traditional methods. The tradition of centuries preserves the characteristics of the Txakoli, and the technology is serving quality. With a vineyard of 22 hectares planted in a traditional high trellis system, there are two native varieties that define Rezabal Txakoli: Hondarribi-Zuri and Hondarribi-beltza.
Hondarribi Beltza is a red varietal used for this Txakoli rose, best described as light, velvety and delicate. It benefits from the constant sea breeze blowing in the vineyard, bringing great freshness, salinity, and acidity to those wines. Naturally fizzy, it is traditionally served poured from a height into the glass.
