Pairing: This Marsannay rosé can be served as an aperitif, with grilled meats, during a barbecue, or with a couscous dish. Some specific examples include chicken koftas and lime couscous, skillet chicken and pearl couscous with Moroccan spices (check it out below), roasted chicken and mushrooms, pork Rillettes, pâté en croute, porchetta sandwiches, Bánh Mì, grilled or roasted salmon, sheet-pan gnocchi with mushrooms, and summer salads with fresh cheeses.

About, thanks to Peter Weygandt. “It was at the 2005 Grand Jours de Bourgogne that I was looking for excellent Burgundies at equally excellent value. Marsannay came to mind as a good candidate, but aside from a couple of well known producers, I was disappointed in the quality of many. That is until I came upon Philippe Collotte. A tall, quiet man, looking a bit like Gary Cooper, but with a lot of passion to make superb wines just waiting to be unleashed. Producing lower yields, more selection before and at harvest, de-stemmed fruit, and for us he bottles everything unfiltered. His Bourgogne parcel was planted in 1947 and there are 4 parcels of 50 + year vines in his super-value Marsannay VV. The deep, rich wines produced by Philippe Collotte are some of the best kept secrets in our portfolio.”
Domaine de Collotte covers 15 hectares, mainly in Marsannay–there is a little Fixin, Gevrey, and Chambolle too–of which 14 hectares are currently in production. The rest is in the process of replanting. The common thread running through Domaine Collotte is this almost intimate link, this visceral attachment to Marsannay. For over 100 years now, each generation has dedicated its life to this village and its vineyards, nestled in the northern part of the Côte de Nuits.
The 2023 Domaine Collotte Marsannay Rosé is sourced from one hectare of Pinot Noir grown in Marsannay. The harvest is sorted as soon as it arrives in the vat room, before being pressed directly. The pressing is done on a long cycle and at low pressure for a quality must. Static settling is carried out for 24 hours, and the wine is vinified 100% in stainless steel tanks.
