Bonding over their shared family lineage in the village of Kozice, Croatia, the cousins joined forces with Vinum to create wines that celebrate leisure, enjoyment, and fun. A Wine That Takes It Easy: The NV Debit Pet-Nat
Made for the first time in 2020, the Pomalo Wine Co.'s NV Debit Pet-Nat is crafted from 100% Debit grapes, an indigenous Croatian variety known for its yellow-gold hue and high yields. Grown in the sun-drenched vineyards near the historic town of Šibenik, the Debit grape benefits from a Mediterranean climate, fertile red and brown topsoil, and a rugged limestone foundation.
Taking a minimal intervention approach, the hand-harvested grapes are destemmed, macerated on the skins for five days, and spontaneously fermented in stainless steel tanks. The wine is then bottled before fermentation is complete and left to age for five months on the lees. The result? A refreshing, zesty Pet-Nat that captures the spirit of the pomalo lifestyle.
