Tasting Notes: This Rosato falls in the category of a rich, food-friendly style of rosé (think Cerasuolo d’Abruzzo, Tavel, and Bandol). You’ll find aromas and flavors of summer flowers, juicy strawberry and pomegranate, blood orange citrus, stone fruits, orange zest and sea spray minerality that meet more savory elements like allspice and dried thyme in the glass.
Pairing: This lovely and zesty rosato can complement every dish at your table but goes especially well with eggplant and meatballs. Some other ideas for pairing inspiration include Eggplant Caponata (see recipe below) over toast or pasta, eggplant parmesan, any dish with Mediterranean influences (avoiding heavy proteins), pizza, poultry or pork dishes with tomato or red pepper, stir fry, chicken teriyaki, sweet and sour chicken or pork, fried rice, and Al Pastor tacos would all be winning combinations.

Flavia, the young enologist of the well-known old Rallo family’s fourth generation, interprets the values of her great grandfather who established the family’s winemaking tradition. The choice to work organically is an effective choice for the well-being of each individual but also for the planet, the sustainable choice is a direct vote for the health and hope of the generations to come. Their main objective is not to achieve high production levels, but to maintain and increase the levels of organic matter in the soils by completely eliminating the supply of fertilizers, herbicides and pesticides to fight parasites (insects, mites, etc .) and pathogens (fungi, bacteria, viruses).
Flavia Rebellious Wines makes wines from the Rallo family’s vineyards in the Trapani area between Contrada Birgi and Paolini (a stone's throw from the Riserva dello Stagnone and the historic Marsala salt pans), which date back to 1860. This proximity to the sea contributes to the creation of mineral-rich soils.
They also have vineyards in DOC Etna, where vines are planted in sandy volcanic soils on the northern slopes of Mount Etna, between the Zottorinoto and Puntalepalino districts, precisely in Solicchiata in the hamlet of Castiglione di Sicilia, at an altitude of 750-900 meters above sea level. These small etna are farmed with special techniques to defeat heat and strong winds coming from the sea. The 30+ percent slope of the land prevents mechanization, so all vineyard work and harvesting happens manually.
