Taste: Domaine les Clos Maurice, based in Saumur Champigny, comes from a centuries-old estate (since 1783) and has certifications in Organic and Biodynamic viticulture. An extended family history, commitment to quality and sustainability, and excellent raw materials combine to produce excellent wines. This Saumur rouge is presumably from younger vines and is lovely. You’ll love the black cherry and raspberry notes with subtle touches of violet on the nose, followed by loads of vibrant cherry and black plum fruit on the palate. Mild tannins and a medium body make this a silky sipper. This chillable red strikes a perfect balance of fruit, acidic tension, grip, and concentration. The finish is long and smooth—a thirst-quenching drinking pleasure—not just for lunch.
Pairing: Cabernet Francs in this vein pair wonderfully with dishes that incorporate herbs, especially dill, fennel, rosemary, and tarragon. Think chicken with herbs like roast chicken with herby crème fraîche or this lavash, chicken & herb pie, an herb-crusted rack of lamb, or a navarin of lamb.
