A short synopsis of the wines.
The R. Dumont Brut Tradition champagne showcases the elegance and finesse of Pinot Noir (90% Pinot Noir & 10% Chardonnay) from the south of Champagne. Raspberry and pomegranate, spiced apple and brioche buns all coalesce together in a rich & round, yet zesty, bubbly. It's the complete package with its lush, tiny bubbles and the chalky minerality we all love from Champagne. Try this with fried Maitake mushrooms or vegetable tempura with ponzu sauce, butternut squash ravioli with brown butter sage, chicken teriyaki, Swedish meatballs, duck and cherry mains... you get the idea; the world of wine pairings is your oyster.
Next, the Jose Michel Brut Tradition. Newly labeled and officially under Antonin, José Michel’s grandson, “Prémices” takes the spot of the old labels’ Brut Tradition. “Prémices” is the “first fruit,” this entry-level cuvée carries a lower dosage than previous vintages. This move matches the perfectly ripened fruit while holding to the quality level the house has become known for. This charmingly friendly Pinot Meunier dominant champagne shows citrus fruits like ripe lemon, mandarin, and even a hint of grapefruit. Tart white fruit and poached yellow apple over buttered biscuits follow, with notes of ginger on the finish. Tight, tiny bubbles, an energetic bead, and a fantastic balance between fruit and freshness make this champagne an easy pick for a beautiful brunch, evening aperitif, or gift. - E. Lyman, Champion Wine Cellars, November 2024. Try this with Chicken Supply's fried chicken skewers (called The Stick) & vinegar dipping sauce!
Last but most certainly not least, the Lingot-Martin Bugey-Cerdon has been a Champion Wine Cellars favorite for years & it's the best time of year to enjoy this charming sparkling rosé from the French alps. Its cheerful bouquet chock-full of red berry, baking spice, brown sugar and gentle fizz make this a go-to pairing for everything from brunch bubbles with omelet's to jambon et beurre baguettes, and as a before-dinner aperitif or an after-dinner delight.
