Taste: This expressive Chenin Blanc shows off a suave nose of ripe fruit, William pear and white peach, with a touch of honey-sweet acacia-lime flowers and a hint of flintiness. On the palate, the wine is rich yet fresh, with a velvety texture that lingers on the tongue. The flavors are well-balanced, with notes that mirrors the nose and leads to a flinty minerality. The wine finishes with a long aftertaste that is both refreshing and elegant, riding a wave of minerality and inviting you to pour another glass immediately.
Pairing: This superb white wines rich and revitalizing flavors make it an excellent pairing for seafood, particularly shellfish like scallops or lobster, as well as grilled/baked/fried fish and sushi (check out these Salmon Croquettes below!). The wine's acidity and refreshing finish also make it an excellent choice to accompany salads, grilled vegetables, and light pasta dishes. For cheese lovers, this Chenin Blanc pairs well with creamy and tangy goat cheese, alone, on a cheese and charcouterie board, or baked in pastry.

About. Why we love it:
Soil with clayey and silty sands. Several hard limestone rocks underlie the Méron
slopes up to the fault of the Loudunais.
This particular soil and subsoil has good draining capacity and early ripening
potential.
The grapes grow on vines with an average age of 45 years.
Winemaking. After crushing and destemming, the grapes of Chenin were pressed.
Fermentation at low temperature (17 to 19° C) during 2 weeks. Cold setting for 24 hours.
Aging in stainless steel tanks on fine lees for 3 to 4 months. Bottled in cellars dug out of
tufa, it continues to age in bottle in these ideal and natural conditions.
All said, this is a delicious Chenin Blanc from a unique terroir and a rich, aromatic profile. Its structure and long aftertaste make it an excellent wine to enjoy at any time, and its origins as a cooperative of dedicated winegrowers make it a wine worth celebrating.
