Tasting Notes: Bountiful aromas of red cherry, ripe raspberry, and red plum come into equilibrium with shades of leather and dried Mediterranean herbs. On the palate this charmingly easy sipper has a soft, medium body and red-fruited flavors underscored by herbal, leather, and baking spice components: a well-rounded combination of fruity and fresh, with a hint of dusty tannin on the finish.
Pairing: This wine has a pure, fruit-forward freshness that makes it super approachable for drinking and pairing. Mushroom and truffle foraging is a popular pastime in the Umbrian hills, and this wine would taste great with dishes based around those ingredients, especially ones that incorporate thyme, rosemary, or sage. Other easy pairings include pasta with Tuscan Ragu, eggplant parmesean, lasagna, roasted meats (including Porchetta—a roasted pork stuffed with herbs), and roasted root veggies. About. Located in the medieval town of Todi, Cantina Tudernum is one of the largest wineries in Umbria, situated on the slopes of the medieval town of Todi’s hill, along the ancient Tiber Road. The Cantina was established in 1958 by 57 vineyard owners looking to produce and market wine together as a cooperative. By 1995, Cantina Tudernum’s vineyard area spanned 650 hectares. That year, the co-op began to redevelop with a focus on downsizing production and increasing quality to showcase the potential of Todi (and greater Umbria) to produce quality wines. Today, the co-operative represents 350 small growers in the area.
