The harvest is done manually with a selection of plots on granite soil. The alcoholic fermentation takes place naturally with the yeasts of the grapes, the aging takes place with the lees, without racking until bottling, at least 6 months in underground glass tanks. This cuvée is produced from the vineyard to the cellar in organic farming." --Producer
