Brothers Paolo and Lorenzo Marchionni make this 100% Sangiovese from the Tuscany region. It is spontaneously fermented with native yeasts, aged in concrete tanks, and unfined and unfiltered. The winery has been certified organic since 2011. The vineyard is composed of about seven hectares, including a beautiful vineyard of Sangiovese and Trebbiano vines, some of which are over 50 years old. The brothers have a deep appreciation for their organic practices, saying, "We learned to observe a plant and its balance, a soil and its fertility, to manage and respect it." Paolo actually studied Philosophy, which he says has helped him more than you can imagine in his wine-making journey. If you can read Italian, his thesis titled Quality in the Philosophy of the Mind. Analysis of a Case: the Taste-Olfactory System sounds fascinating.
