Catarina blanc is a single-vineyard wine. The plot is located in « La Cerise » lieu-dit, in the villlage of Châteauneuf-du-Pape.
The vines are 40 years old on average. The soils are clay-limestone, and rolled pebble type.
Winemaking and Ageing
The average yield is 30hl/ha.
After pressing, the juices are settled. 60% of the wine is vinified using natural yeasts in new French oak demi-muids, the other part in cement vats.Batonnage on fine lees is done during 8 to 9 months." --Domaine Duseigneur
