2012 Angélique Léon Chinon

Chinon is an AOC located in the Touraine, in the Loire Valley, France. Angélique's estate lays west of Chinon, and her vineyards reside on sandy, gravelly soils along the south bank of the River Loire. She grows white asparagus on her property as well and uses only sustainable farming methods for both her wine and produce. She uses a touch of oak in her Chinon, and the result is a medium-bodied Chinon with red and black fruit, herbal influences and natural spices that pair quite well with mushroom based dishes or braised short rib.
