Varietals: A blend of many of WT Vintners' single-vineyard Syrahs, a splash of Grenache, and a drop of Mourvèdre
Tasting Notes: The nose leads with violets, blueberry, blackberry, balsamic macerated raspberry, cracked pepper, and mint. With a bit of oxygen, Syrah's classic notes of smoked and cured meats begin to emerge. On the palate, the aromas sync with the nose and are accentuated by a seamless texture, fine supple tannins, and vibrant acidity.
Pairing: Farro rissoto with wild mushrooms and roasted delicata squash would be an excellent vegetarian choice. Carnivores should try an herb crusted lamb saddle with mint salsa verde. Select fresh cheeses such as triple cream brie, cream cheese or a softer blue cheese with Washington syrah.
